Cassis absolute does not come from the berry. It is extracted from the dormant flower buds of the blackcurrant bush. The fruit-like note it carries is produced in the bud itself, by a trace sulphur compound that perfumers describe as catty.
01 · Origin
Ribes nigrum is a deciduous shrub of the currant family, Grossulariaceae, native to northern and central Europe. This absolute is produced in France from conventionally grown bushes.
02 · Process
The buds are gathered while the plant is dormant and extracted with solvent; the concrete is then washed with alcohol to give the absolute. It is supplied here at 70% in organic alcohol, which keeps a dense material workable. Delta-3-carene, terpinolene and beta-caryophyllene lead the profile, with limonene and beta-phellandrene. The sulphurous fraction is small in proportion and large in effect.
03 · In Practice
Green, tart and fruity, with a resinous, slightly animalic undertone. A top to middle note in natural perfumery, valued in chypre and fruity floral structures. A single drop alters a whole accord. Blends with rose, bergamot, mandarin, jasmine, vetiver, oakmoss and labdanum.
